Onion Greens and Ginger Dressing

When life (or your CSA farmer) gives you onion greens, make dressing.  Specifically this punchy and flavorsome Onion Green and Ginger Dressing.

Whether in the CSA share or on the farmers market table, we like to keep the greens on the veg as much as possible!  It makes them look lovely, demonstrates how fresh the produce is, and always has some sort of culinary use.  Spring onions are no exception.  But what to do with those luscious, thick green leaves?  You can pop them in the freezer to use later to flavor soups or stock, or chop them finely and garnish anything and everything.  Or you can make either of these salad dressings!  You can use it on green salads, or as a vegetable dip.  I am thinking it would be fabulous with apples in a Waldorf Salad-ish thing.  Try it with chicken or fish.  This vegetarian recipe can easily be made vegan by substituting they honey with the sweetener of your choice.

Onion Green and Ginger Dressing

Ingredients
  • greens from 1 bunch spring onions
  • 1 Tablespoon fresh ginger
  • 1/2 cup olive or other salad oil
  • 1/4 cup apple cider or rice vinegar
  • 2 teaspoons soy sauce
  • 1 teaspoon sesame oil
  • 1 Tablespoon honey
Directions
  • Step 1 coarsely chop onion greens
  • Step 2 peel and thinly slice ginger crosswise
  • Step 3 throw everything in the blender and process until smooth
