Cool Cucumber Gazpacho

Ever thought of turning your cucumbers into a cool, refreshing summer soup?  All you need is a powerful blender or food processor and a few additional ingredients.  The avocado makes this recipe especially smooth and creamy.  Don’t be shy with the salt; cold foods need to be seasoned more strongly than foods that are served warm.

Cool Cucumber Gazpacho

Ingredients
  • 2 medium cucumbers, peeled and seeded
  • juice of 1 lime
  • 2 teaspoons minced jalapeno
  • 1 avocado
  • 1 Tablespoon mint or cilantro, chopped
  • 2 Tablespoons red onion, chopped
  • 2 Tablespoons olive oil
  • salt and pepper to taste
Directions
  • Step 1 combine all ingredients in a powerful blender and process until smooth. Chill and serve garnished with mint or cilantro leaves and thinly sliced red onion.
