Tangy Citrus Kale Salad

Sweet + Sour + Crunchy = Delicious

You know by now that kale is a superfood.  If Popeye had known about this amazing green he’d surely be slamming this tangy citrus kale salad instead of spinach.  Kale is wonderful for salad because you can make it and dress it ahead.  Great for lunches on the go.  The following recipe is really just a jumping off point.  You can tweak it any way you like.  Sweet, sour and crunchy is the secret to a delicious kale salad.  Vinegar or lemon can provide the sour.  Dried or fresh fruit makes it sweet.  Carrots, radishes and hakurei turnips are great for adding crunch.  Ditto peanuts or almonds.   Anything that might get soggy, like fried noodles, croutons, or (be still my heart) corn chips, should be added at the last moment before eating.

Prepare the Kale!

If the kale has stems or thick ribs, simply tear the leaves off the central rib.  You can use a knife, of course, but you don’t need to worry about bruising the leaves because you are going to do that on purpose in a few moments, anyway.  Chop the kale into bit size pieces.  Transfer to a bowl, sprinkle with salt, and then get your hands in there and bruise that kale.  Just scrunch it up in your hands until it is dark green and limp.  The salt will help it soften, too.  Now you kale is ready to get dressed and accessorized!

Ingredients
  • 1 bunch kale
  • 1 large orange
  • 4-5 radishes
  • 1/4 cup pumpkin seeds (pepitas) or sunflower seeds
  • optional: 4 ounces soft cheese such as feta, halloumi or chevre
  • 3 Tablespoons lime juice
  • 3 Tablespoons olive oil
  • 1 Tablespoon honey
  • salt to taste
Directions
  • Step 1 Prepare kale (see above)
  • Step 2 combine lime juice, oil and honey and pour over the kale
  • Step 3 add remaining ingredients and toss
