Savory Vegan Mustard Greens

Mustard greens are one of my favorites.  The flavor is unique and sharp and bitter and I love it.  This is a simple way to prepare mustard greens without the pork but full of flavor.

Different brands of liquid smoke have different strengths.  You might want to start with few drops and work your way up to the level of smokiness that you like.

If the mustard greens have thick stems, the stems can be chopped and added to the pan first to cook for a few minutes.  Then add the greens.  Young, tender mustard can thrown in all together.

It’s worth using good apple cider vinegar and not cider flavored vinegar.  Bragg’s is widely available and I like it very much.

This vegan version of classic southern mustard greens is full of smoky, savory flavor

Ingredients
  • Two bunches mustard greens
  • 1 Tablespoon cooking fat
  • 2 teaspoons apple cider vinegar
  • 1/2 teaspoon liquid smoke
  • salt to taste
Directions
  • Step 1 Wash and chop mustard greens
  • Step 2 Heat fat in a wide saute pan and add the mustard.  If the leaves are very dry you may need to add a little bit of water
  • Step 3 Once the mustard begins to release water add the vinegar and liquid smoke
  • Step 4 Cover and steam until tender
  • Step 5 salt to taste
