Cool Cucumber Gazpacho
Ingredients
- 2 medium cucumbers, peeled and seeded
- juice of 1 lime
- 2 teaspoons minced jalapeno
- 1 avocado
- 1 Tablespoon mint or cilantro, chopped
- 2 Tablespoons red onion, chopped
- 2 Tablespoons olive oil
- salt and pepper to taste
Directions
- Step 1 combine all ingredients in a powerful blender and process until smooth. Chill and serve garnished with mint or cilantro leaves and thinly sliced red onion.
