It’s greens season! I hope you are hungry for salad, there are a lot of leafy greens in the box this week. People often asked us what greens should be cooked and what greens should be eaten raw. It’s all a matter of taste. I’d eat everything in the box this week raw except the radish greens in the full shares. But most greens are also great cooked. Even lettuce can be cooked, though I don’t recommend it with your tender salad mix. In previous years, when we have had a glut of lettuce, we have been known to enjoy lettuce soup! I promise I didn’t make it up, it’s a thing.
My advice is to taste your greens raw and if they are yummy, then eat them raw. If it tastes sharp to you, cooking tends to mellow the flavor out. If you choose to cook any of the tender greens you are getting this week just a very quick saute is best.
What can you expect in coming weeks? Well, more greens for sure. Hopefully next week the strawberries will start to ripen. Our farmer friends just an hour south of us in Tupelo are already harvesting berries, so ours can’t be too far behind! Hakurei turnips and kohlrabi should be ready soon, too. And cabbage and beets are on the way. It is hard to predict what when crops will be ready. Every spring is so different, even when we plant things at the same time each year.
I think spring is the most challenging season to be a farmer in our region. The transition from cold winter weather to summery heat can happen so quickly, and the fluctuating temperatures can be hard for plants to tolerate. The ideal window for planting is short. Heavy spring rains wash tiny spring seeds away. And the hot south wind that dries out the soil forms a concrete-like crust. But we farmers love a challenge! And we are doing our best to work with whatever nature brings our way.
One thing that has made spring easier is that Randy’s mom, Connie, is here for an extended visit. She and Cooper have been spending a lot of time together. Cooper adores his “Grammy C”, and its been a huge help to me and Randy. We are super grateful for all her help at this busy busy busy time of year.
