Right now the farm is giving us bountiful harvests of squash, zucchini, peppers and tomatoes. So that is what is in the shares this week. The field is looking beautiful, but we are still waiting on the okra and melons to start producing. Everything is a little late this year because it was so wet back in May that we got very behind on our planting schedule. Eating with the seasons sometimes means eating a lot of zucchini, or pepper, or potatoes and carrots. Here are some squash and zucchini ideas in case you are experiencing squash overload.
- Zucchini fritters
- baked zucchini fries – my mom made these all the time when I was a kid when our garden was cranking out the zucchini.

- Mock Apple Pie – I have never made this and am deeply skeptical but if you try it I would love to know how it turns out
And if you still have a backlog of carrots to get through, here are some different recipe ideas:
- pickled carrots – you may not have thought of turning your carrots into pickles, but they are delicious! I like mine a little spicy.
- there are numerous chilled carrot soups to try including carrot gazpacho, chilled carrot soup with cumin and lime, and carrot ginger soup
- carrot smoothie – carrot cake in a glass! You probably need a high powered blender to do this one justice.
